This recipe really is amazeballs- il probably say that about every recipe I put on here because I wouldn’t share non-amazeballs recipes with you (obviously) BUT this one really is! And and and it is sooo easy to make.
3-4 ripe peaches (skin off) if peaches aren’t in season use tinned- just be aware that they are often in syrup so stick them in a seive and give them a good rinse under the tap first
3 tbsp of natural yoghurt (can use dairy free)
1 tbsp of honey
Sprig of mint
Cut the peaches into segments and put in a freezer bag. Keep in the freezer until hard (overnight).
Using a hand blender (my smoothie maker couldn’t handle it) mash up the peaches, yoghurt and honey until smooth (but don’t overdo it).
Serve in a bowl with a sprig of mint for prettiness, if you have any.
Eat! Unfortunately, there’s no other option, you simply HAVE to eat it all then and there. Ha ha- no really though, it won’t freeze well so…you gotta eat it all 🙂
