Meat Free Monday: Healthy Eating Meal Plan and Exercise

Hi guys I thought I’d share with you all a typical day of mine.
Let me be clear, this is what I eat on a really good day, (and by good I mean healthy) on a good day I avoid sugary snacks/drinks, processed food and food high in salt or saturated fat. However, I am not a robot- I enjoy treats ALOT. Keeping myself full on healthy food prevents me from giving in to my cravings for bad food (most of the time). I eat healthy food 80% of the time. It’s just as important to indulge now and then as it is to eat well.

Lately I have been trying to cut down on my intake of meat (for lots of reasons but thats for another blog post) so I always try and make Monday (and often Tues, Weds, Thurs) meat free. Here is my meat free, healthy eating meal plan and exercise for the day.

Porridge oats with koko coconut water, 1 chopped apple, sprinkle of cinnamon

AM Snack
Protein pancakes (1scoop strawberry protein powder, 1 and a 1/2 bananas, 2 eggs.
Whizz up in blender and heat in pan
1tbsp of maple syrup with it.

Stir fry- rice noodles (the wok ready ones- the others aren’t as nice), rainbow veg (today it was sugar snap peas, red pepper and red cabbage) some pineapple, a dash of soy sauce and some sweet chilli dipping sauce. Heated in a wok.

PM Snack: fruit 1 or 2 tangerines or 1 apple with peanut butter or veggie sticks with houmous

Dinner: par boiled sweet potato which is then fried in a small amount of coconut oil and eaten with a mixed leaf salad. I like to add pomegranate pips and some goats cheese then dress with a homemade olive oil dressing or balsamic glaze.

Drinks: 1 green tea
2l of water if possible. I am able to drink lots however, some people might have jobs that don’t allow them to go to the toilet every 5 minutes so I appreciate this isn’t always possible.

I am currently using Kayla Itsines Bikini Body Guide. However, I also enjoy strength training so I like to add in a couple of weights sessions each week too.

I also usually turn the school run into a 30 min walk fast paced walk.
