I whipped up this little recipe a couple of weeks ago at work as I didn’t have much time. It’s a great one if you’re in a rush but want something better (and healthier) than your standard speedy evening meal e.g. beans on toasts (we’ve all been there).
I realise that satay chicken is more of a thai dish so would probably be better paired with lemon and coriander rice perhaps but this was all I had on hand so just roll with it okay?
Also, apologies, the marinade and sauce was made from a sachet of powder and added coconut milk. Homemade is obviously ideal but there isn’t always time (or money) you gotta do what you can. You’ll need to have your wits about you for this dish as you will be doing about three things at once- don’t worry though, nothing too complicated.
Mini chicken fillets
Satay chicken marinade and sauce (see pic at bottom of page of the one I got from Tesco’s)
1 can of coconut milk
1 cup of rice
1/2 cup broccoli (chopped into small pieces)
1/4 cup of sweetcorn
1/4 of green beans (chopped into small pieces)
Tbsp of oil
Make the satay marinade following instructions on the packet, put in a bowl and add chicken.
Boil the rice in a pan- whilst this is cooking you can heat the chicken and marinade in a pan until cooked (medium heat, approx 10 mins) and also cook the veg in a separate pan, removing from the heat when cooked.
Once the chicken is cooked, skewer it (can use without skewers if necessary) transfer to a griddle pan, (or frying pan if you don’t have one) and cook until slightly browned on both sides (5 mins).
Whilst the chicken is cooking on the griddle pan, heat some oil in a frying pan and crack the eggs into it.
Break the eggs up and continue to stir until cooked well (a bit like scramble eggs only slightly more cooked). Once the eggs are done transfer to a bowl and use the same pan to fry the cooked rice. Fry for a couple of minutes and the add in the eggs and veg continuing to cook for a further 2 minutes.
Finally, heat the satay sauce in a pan with the coconut milk (according to recipe on packet) and serve in a little dish on the side of the plate.
