10 Minute Veggie Tacos (Gluten-free and Vegan)

Just whipped these little babies up- decided to do them meat free as I’m trying to eat a vegetarian diet Monday-Saturday however you are welcome to use meat instead of Quorn but obviously, its gonna take slightly longer than 10 minutes that way.

This meal is super healthy and low-carb (contains no wheat either- YAY!) so you can enjoy these without the guilt! Not that there should be any guilt if it wasn’t healthy, but you know what I mean.

I would probably eat only 1 or 2 at a time and go back for seconds (leaving the mix on a low heat) as they went cold quite quickly.

Ingredients

1tbsp of olive/coconut oil

Half an onion (finely chopped)

100g quorn mince (check its egg-free for vegans!)

1/2 tin chopped tomatoes

Handful of frozen peppers (can use fresh but might take longer to soften)

Dash of worcestershire sauce

Dash of balsamic vinegar

1 sachet of taco spice mix (check pack for gluten free-ers)

1 tbsp of tomato ketchup

Salt and pepper to taste

1 large carrot (peeled)

1 Romain lettuce heart

Sprinkle of vegan parmesan style cheese/vegan hard cheese/normal cheddar cheese

Chilli flakes (optional)

Method

Heat the oil in a pan on low heat and throw in the onion. Once the onion has softened, add the quorn, stirring occasionally. After approx. 5 mins add the tomatoes, peppers, worcestershire sauce, balsamic vinegar, spice mix and ketchup.

Whilst this continues to cook for a further 5 mins, grate the carrot and clean and prepare the lettuce leaves on a plate. Sprinkle the carrot on top of the lettuce.

Once the taco mix has had 10 mins, season with salt and pepper to taste.

Spoon the mix on top of the carrot and sprinkle with cheese, add chilli flakes (optional).
