The Healthiest, Easiest Mince Pie Recipe

This recipe is soo good! I love mince pies but they can be pretty unhealthy: Exhibit A, a Sainsburys mince pie, you can see that despite its small size, 1 mince pie comes in at a whopping 259kcal and 10.5g of fat.

So I decided to create this recipe for you so that you can enjoy these babies without the guilt. My mince pies come in at only 55kcal and only 2.2g of fat. Woo!

1 jar of mincemeat (I used a jar we had in the cupboard- it was a Waitrose one and was 4 years past its sell by date but they tasted fine. Check your mothers cupboard first. I bet she has some 😉
1 egg (yolk removed)
Sprinkle of icing sugar

Preheat the oven to 220 degrees c
Using a pastry cutter the same size as your muffin tray holes, cut out the pastry and place into the muffin trays.
If you don’t have a non stick a muffin tray grease the tray with a little butter so the pies don’t stick to it.

Spoon a small amount of mincemeat on top of the pastry.
Cut out more pastry to put on top of the mincemeat. I used a star cutter so it looked more Christmassy. Take any scrappy bits of pastry and make into a ball and re-roll to make more.
Press down the edges of the pastry with a fork to seal the pie.

Brush the pies with a little egg so they come out nice and brown.

Whack then in the oven and cook for about 15-20 mins or until slightly brown on top.
Dust with icing sugar and…
