I hope you all had a lovely day yesterday- I enjoyed continually stuffing my face with food for 24hrs. I hope you had a little indulgence because it’s important to treat yourself, especially on Christmas Day!
For many people their healthy habits will probably be put on hold until after New Years but if like me, you are ready for something a little more healthy, then I have the perfect recipe for you!
Turkey is a great lean meat and the most recommended meat for people trying to lose fat/weight or who simply just want to be more healthy. It’s likely you’ve still got turkey coming out of your ears, despite the feasting that went on yesterday. If that’s the case, enjoy my turkey salad recipe below.
This pomegranate, red cabbage and turkey salad is inspired by one of my favourite chefs, Ottolenghi. If you haven’t heard of him, check him out. He loves cooking vegetarian dishes and his recipes are delicious and always original.
For this recipe don’t worry too much about quantities of each ingredient- salads are suppose to be messy. Just throw in however much you want of each food.
Cooked turkey meat (cut into small pieces)
Cabbage (chopped into small pieces)
Oranges/satsumas/tangerines (chopped up)
Spinach (or any other green leafies you have)
Chop up all the meat and veg.
Chuck all the food in a nice bowl and mix it up a little so it’s all evenly distributed. Drizzle the oil and balsamic over and…devour!
As a guide for oil and balsamic, if it’s a small salad for 2-3 people use approx 1tbsp of oil and 1tbsp of balsamic vinegar)
