I love making vegan food- it’s pretty much always healthy and usually you end up eating loads of veg. It’s also great because you end up learning so much about food and using it in ways you might never have thought of. This recipe’s secret weapon is avocado- avocado is a wonder food for vegans because it can make sweet an savoury foods super creamy and it contains healthy fats that your body needs. I pinched this recipe from Damn Delicious but changed it up a little. Ingredients:
- Wholegrain spaghetti (however much you want)
- 2 ripe avocados
- 1/2 cup fresh basil leaves
- 2 cloves garlic
- 4-5 tablespoons freshly squeezed lemon juice
- Salt and freshly ground black pepper, to taste
- 1/3 cup olive oil
- 1 cup cherry tomatoes
Method: reheat the oven to 200c. Line an oven tray with foil and place the tomatoes on the tray with a drizzle of olive oil.
Cook for about 10-15 mins or until the skins have started to go wrinkley.
Cook the spaghetti as per the instructions on the packet. In a food processor blend up the avocados, garlic, basil, lemon juice and olive oil until smooth and creamy.
Drain the spaghetti and return to the pan. Stir in the avocado mix and the tomatoes and serve with a sprig of basil on top and…devour!
