I made this recipe the other day with Mummy Hem for lunch and it is super quick and super easy. It’s also great if you’re eating with someone who eats meat and someone who doesn’t/a vegan because you can just make your own and add in whatever you like. Obviously for vegans, omit regular cheese and add vegan cheese 🙂
Ingredients per wrap:
2 Wholewheat tortilla wraps
1 tbsp of pesto
Handful of chopped peppers
Handful of chopped fresh tomatoes
Handful of jalapeños (optional)
Handful of spinach
Handful of lettuce leaves
Handful of grated cheddar
2 tbsp of goats cheese (the creamy crumbly kind)
N.b if you want to add meat it needs to be pre-cooked. .
Place one wrap in a large plan (large enough so it sits flat) and put the heat on low.
Spoon on the pesto and spread so that its evenly covering the whole wrap.
Add the rest of the ingredients (I usually do the cheese last) and top with another wrap. Turn the heat to medium and press the wrap down so that the cheese can melt and stick to the bottom wrap. After 3-4 mins (watch this because you want the cheese to be quite melty so it’s easy to turn over but you don’t want the bottom wrap to burn so keep checking it) use a spatula or other flat kitchen utensil and flip it over to cook the other side. This should only take a couple of mins.
Move the quesadilla to a plate and cut into triangles like a pizza and…devour!
