This little guy is such a healthy sweet treat to have when you’re craving sugar. But, it does take a couple of hours to set so plan ahead chocolate lovers! The dark chocolate hardens when mixing with the other ingredients and creates a nice crunchy-ish textures and the raspberry and a slight tartness which really compliments the chocolate (check me out sounding like a food critic…)
3/4 cup of koko coconut ‘milk’ or almond milk
2tsp of maple syrup
1tsp of vanilla essence
4 tbsp of chia seeds
1tbsp of cocoa powder
6 squares of dark chocolate, melted (optional)
For the topping:
Handful of frozen raspberries
2-3tbsp of water
Add all chia pudding ingredients into a jar and whisk. Cover and leave in the fridge until set (almost like jelly but even thicker). In a blender mix up the raspberries and water to make a puree.
Top the chia pudding with the puree and voila! Choc heaven..devour it my fellow chocolate lover, you deserve it!
