This recipe has become my ‘go-to’ recipe for impressing friends (vegan and non-vegan) and a firm Friday night favourite when you’ve got a bit more time to prep. I never used to like chickpeas but I now realise that stems from memories of eating them undercooked which mean hard and crumbly. I have developed a great love for the humble chickpea and it is an excellent healthy option and meat replacement.
I love Mexican food- I eat it quite a lot but if you’re not careful, it can be full of fat and pretty unhealthy. This is a great little leftovers recipe or weekend meal. Instead of using beef, I like to use lean turkey mince as it is much leaner than other mince meats.
You can get as creative as you want with this recipe- I have kept it quite simple but add whatever veggies or sauces you want.
I also used whole grain, seeded wraps which are much healthier than white tortilla wraps (I got mine from Tescos).
The coleslaw is also amazeballs BUT you’ve gotta use Braeburn or jazz apples as they are the sweetest and crunchiest apples.
