Vegan Chickpea Tacos with Crunch Mango Slaw & Spicy Red Pepper Sauce

Juice 2-4

This recipe has become my ‘go-to’ recipe for impressing friends (vegan and non-vegan) and a firm Friday night favourite when you’ve got a bit more time to prep. I never used to like chickpeas but I now realise that stems from memories of eating them undercooked which mean hard and crumbly. I have developed a great love for the humble chickpea and it is an excellent healthy option and meat replacement.

Juice 2-5

So lets get down to the nitty gritty.

Vegan Chocolate and Raspberry Chia Pudding

IMG_8264This little guy is such a healthy sweet treat to have when you’re craving sugar. But, it does take a couple of hours to set so plan ahead chocolate lovers! The dark chocolate hardens when mixing with the other ingredients and creates a nice crunchy-ish textures and the raspberry and a slight tartness which really compliments the chocolate (check me out sounding like a food critic…)

Pre-Holiday Diet and Exercise Routine

‘No carbs before Marbs’ or rather ‘No carbs before Barbs’ as that’s where I’m off to (Barbados).

I’m a very goal orientated and motivated person and prefer to work under pressure. If I gave myself a goal that was in 6 months time I might not work as hard during the first few months because 6 months is just too far away for me.

I also like to push myself and, whilst I strive to have a healthy bod all year round I don’t think there’s anything wrong with becoming a little stricter and working harder for a special event or holiday- I want to look my best.

So with just under 4 weeks before my holiday (25 days- not that I’m counting or anything) I thought I’d up the exercise and cut the crap in my diet to really see what my body is capable of.

Healthy Mexican Tacos

IMG_2555

Mexican food is probably my favourite food, scratch that, BBQ food is my favourite, Mexican comes in at a close second. The great thing about both is that they are super easy to make healthy (except the large handfuls or cheese and spoonfuls of sour cream poured on top of it, haha).

I made this recipe the other day when I didn’t have any taco shells. Taco shells aren’t actually that unhealthy but I fancied adding in some rice instead. You can always omit the rice if you fancy. No rules here 🙂

If you want to make it veggie friendly then either use quorn chicken pieces of check out my other blog post for 10 minutes veggie/vegan tacos here

So how’d ya make it?
