This recipe has become my ‘go-to’ recipe for impressing friends (vegan and non-vegan) and a firm Friday night favourite when you’ve got a bit more time to prep. I never used to like chickpeas but I now realise that stems from memories of eating them undercooked which mean hard and crumbly. I have developed a great love for the humble chickpea and it is an excellent healthy option and meat replacement.

Super Green Healthy Smoothie

This is my super clean, green, healthy smoothie.
Don’t be put off by the colour- I promise it is delicious.
I do however like to drink my smoothies through a straw- I have a weird thing about textures of some foods and I just find it easier to drink that way.

If you’re drinking smoothies and looking to loose some weight then I would suggest making smoothies that have a higher ratio of veg in them than fruit. As long as you have some fruit (berries are best as they are lower in sugar although this recipe includes pineapple to balance out the taste of the green pepper) you wont really taste the veg. Another way I like to make the smoothie taste nicer and disguise the veg taste is by adding lemon or lime juice.

I generally like to topped my smoothies with either chia seeds or flaxseeds (or sometimes both).

Chia seeds are great because they are really high in fiber, omega 3 (more omega 3 than salmon- gram for gram) and loaded with antioxidants. They can also help with weight loss because they expand in your stomach so you’ll feel fuller.

Flaxseeds are also really high in fiber and omega 3 and phytochemicals (help to balance female hormones). Anyhoo both are super good for you and can be picked up at any health food store or on amazon.

1 banana
handful of spinach (I buy frozen because fresh lasts for about 2 mins before its manky)
cucumber (approx. the length of a finger- peeled)
1/3 green pepper
1/3-1/2 cup of pineapple
1-2 cups of water depending on how thick you like your smoothie
dash of lime juice

Tbsp of chia seeds
Tbsp. of flaxseeds

Stick all the ingredients in a blender and whizz up until smooth. Top with chia seeds and flax seeds and mix.
