The korma is probably my favourite curry. No scratch that, it IS my favourite curry. I don’t even know why I entertained the idea that there might be another contender. There isn’t. It’s korma all the way. I love the creamy coco nutty-ness of it and I’m not a huge fan of super spicy foods so the korma is perfect for mild curry lovers.
This recipe is pretty easy and reheats well. There’s a load of ingredients I haven’t included but feel free to go wild and add white or sweet potatoes, any other type of bean and veg like broccoli, cauliflower, kale etc.
So this is one of my new favourite pancake recipes. I LOVE pancakes- it’s become a Sunday/Weekend tradition for my boyfriend and me to treat ourselves and have pancakes. This recipe isn’t one of my most healthy, but it also isn’t that unhealthy, especially if you make it with my strawberry puree instead of adding sugar or maple syrup.
This recipe is super quick and easy and great if you’re looking to try something new. It’s also lovely to photograph food that is so bright and colourful! You’ll get seriously good instagram-worthy pics.
The great thing about this recipe is that you can make it vegan/veggie/meat-loving so you can cater to all your guests. Yay!
If you read my last post you’ll know that a couple of days ago I went shopping for a pair of high waisted denim hot pants and ended up having a bit of a meltdown- long story short, the lighting in the Topshop changing room was so unflattering and the shorts made me look gross- as a result I had a ‘ugh I hate my body’ day. Let me tell you right now and save you years of trying shit, fad diets like I have, THEY DON’T WORK. Juice cleanses, detox teas, diet pills, wraps and ridiculous bone crushing corsets might work in the short term, but you can’t keep that shit up. It’s simply not sustainable (and not good for your body). So learn from mine and millions of others women’s mistake that the only way to lose weight is to eat healthy food you enjoy and move your body on the daily.
This recipe actually features a guest chef *drum roll* my boyfriend! ha ha. We were in a bit of a rush so he whipped up this little piece of deeelish-ness in about 15 mins.
You can easily make this vegan by simply omitting the meat (perhaps replacing with a quorn alternative)
Measurements don’t really matter here- it depends how many you are cooking for.
Lean pork, (any cut you fancy) chopped,
3-4 tbsp of sweet chilli dipping sauce (ok SCDS isn’t that healthy as it has a lot of sugar in but we’re only using a small amount),
4-5tbsp of soy sauce,
Wok ready rice noodles
Heat the chicken in a wok or pan until cooked.
Add veg, sweet chilli dipping sauce and soy sauce and cook for a further 6 mins, stirring occasionally.
Add the rice noodles for 2 more mins (or according to instructions on pack)
See, dead quick, dead easy.
